Vegan Tzatziki

Makes enough for 4-6 wraps depending on how generous you are with it.

Ingredients

  • 1/2 cup cucumber seeds removed and grated with skin on
  • 1 container Kite Hill unsweetened plain Greek Yogurt
  • 2 cloves garlic minced
  • 2 teaspoons dried dill
  • 2 teaspoons lemon juice
  • salt to taste
  • freshly ground pepper to taste

Instructions

  • Place grated cucumber in a fine mesh strainer over a bowl or the sink and let drain for about 45 minutes.
  • Stir together all of the ingredients in a medium bowl. Refrigerate until ready to use.

Notes

If your cucumber is organic, there's no reason to peel it. And the color of the peel looks nice in the tzatziki.
