6tablespoonsEarth Balanceor other vegan butter
3/4cupsugar
1teaspoonmolasses
2teaspoonsvanilla extract
1cupBob's Red Mill 1:1 Gluten Free Flour
1/2teaspoonground cinnamon
3/4teaspoonbaking powder
1/4teaspoonsalt
1/3cupvegan chocolate chipsEnjoy Life brand is also gluten-free
1/3cupchopped walnuts
Instructions
Preheat oven to 350F and line the 8 inch square pan with parchment paper.
In a medium bowl, beat the vegan butter, sugar, molasses, vanilla extract until light and fluffy. Set aside.
In a small bowl, whisk together the flour, cinnamon, baking powder, salt until combined. Add the dry ingredients to the wet ingredients and stir to combine. Once all of the dry ingredients are incorporated add the chocolate chips and walnuts. The batter will be thick.
Add the batter to the baking pan, spread evenly, and bake for 15-20 minutes. Cool completely before you cut and serve.
Notes
I made these for a gluten-free friend but you can substitute unbleached all-purpose wheat flour for the gluten-free flour if you prefer.
