If you can’t find bagged, washed and chopped collards you’ll need to prep them. Wash the collard greens thoroughly and cut away the tough stem. Now chop the greens into bite-sized pieces.
Set the Instant Pot to saute. Add the onion and garlic and cook until they begin to soften 2-3 minutes. Add maple syrup, hot sauce, liquid smoke, vegetable broth, and collards. Stir to combine. Turn off saute function, place and lock lid, and cook at high pressure for 3 minutes. Allow the pressure to release naturally for 10 minutes and then manually release the rest.
Taste for seasoning. Add up to 2 tablespoons of Bragg Liquid Aminos if more salt is needed. Now's the time to add more hot sauce if you like.
Notes
If you can’t find collards, try kale, turnip, or mustard greens or a mixture. They will all be delicious. I wouldn’t use spinach though because it’s a bit too delicate. Also, feel free to add roots like carrots or turnips. They work well in this.
