No Bake Carrot Cake Bites

How do you get in the spirit of the season when it feels more like summer? For me that means making no bake treats that remind me of fall. I already posted No Bake Cranberry Energy Balls but I've got another one for you - No Bake Carrot Cake Bites!

These little balls pack in all the flavors of carrot cake without the refined sugars and flours! Walnuts, coconut, carrot, oats and dates give them substance. Cinnamon, cardamom, ginger, and cloves give them that delicious carrot cake flavor.

You can store these in the refrigerator or freezer but we like to keep them frozen. They don't freeze solid, at least in our RV fridge. But that keeps the balls a bit more solid if you decide to take them on a hike or picnic. But you can still bite into them straight out of the freezer, no problem.

I make these carrot cake bites in the food processor bowl of my Ninja Mega Kitchen System, but you could also make them in a high speed blender if that's what you have. 

Keeping healthier treats like this around really helps me satisfy my sweet tooth without overloading on fat and sugar. These end up being about 126 calories each but I find that one satisfies me and kills my craving for sweets.

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 3/4 cup walnuts
  • 1 carrot grated
  • 1/2 cup dates soaked in water and drained if they aren't soft
  • 1 tsp cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves

Instructions

  • Add all ingredients into the bowl of a food processor. Process until finely crumbled. It's ready when you can pinch it together and it stays together.
  • Taste the mixture and add additional spices if you like. You can also add a tablespoon of agave or maple syrup but we didn't need it.
  • With your hands, grab about a tablespoon of mixture, squeeze it and then roll it into a ball. Repeat with the rest of the mixture. Put in an airtight container and set in the freezer for at least 15 minutes. After that, store in the fridge or freezer, your choice. We like them frozen.
