Two Delicious Vegan Camping Meal Ideas for Your Adventures on the Road

Campers and travelers know that it can often be difficult to whip up a delicious meal while you’re on the road. You have limited utensils, you can’t really keep fresh ingredients around and you might resort to simple foods like cereal, granola bars or packaged meals. While there are an increasing number of vegan options as of late, it still feels a bit limited and could make our adventures a little less exciting.

So in this post, we’ll be sharing two of our favorite vegan camping meal recipe ideas to keep your appetite full and your tastebuds curious.

Roasted Cauliflower

Some people think of cauliflower as being bland and boring. While it’s true that cauliflower alone is rather bland, it’s amazing at absorbing flavor. When combined with its unique texture that changes depending on how you cook it, you have the perfect blank canvas for a delicious vegan dish.

Consider looking at a roasted cauliflower recipe to get ideas on flavor combinations and spices to use. The easiest way to roast cauliflower outdoors is to wrap them in foil with all the seasonings you want, then place it in a heavy pot that can sit over your campfire.

If you have a large pot, you can place the entire cauliflower in without cutting it up first. You can then add extras around the cauliflower such as potato chunks, root vegetables and more. This is a great option for a large evening meal with all your family or as a snack that can be served on skewers.

Roasted cauliflower is also a great side dish if you break the cauliflower into smaller pieces that resemble rice. This can then be served with sauces and other proteins, but you’ll miss out on the wonderful texture of roasted cauliflower.

Chickpea Scramble

Chickpea flour is an incredibly convenient ingredient for vegans since it keeps for a long time, is packed with fiber and protein, great for digestion and loaded with nutrients. It's also a great alternative for people avoiding soy.

For a hearty breakfast to pick you up in the morning, consider making some chickpea scramble with toasted bread or a vegetable medley. The ingredients can be easier to transport than the ones for Tofu Scramble if you are tent camping or backpacking.

To make this recipe even simpler and easier when camping, go ahead and mix all the dry ingredients together ahead of time. Then you will only have the dry and wet ingredients to mix together when it's time to cook.

Chickpea Scramble

  • 1/2 cups chickpea flour
  • 1/2 cup vegetable broth
  • 1 teaspoon garlic powder
  • salt & pepper to taste
  • 1 pinch turmeric optional
  • 1 pinch kala namak or black salt optional


  • Add the vegetable broth to a bowl then add the chickpea flour gradually (one tablespoon at a time) until smooth. Mix this with a teaspoon of garlic powder and salt and pepper to taste.
  • If you want the scramble to look more like eggs, a small pinch of turmeric can add color. For an eggy flavor, you can add kala namak (Indian black salt) if you can find it. It's available on Amazon and at some ethnic grocery stores.
  • The mixture should be relatively thick before you add it to a well-oiled pan. Flatten the mixture in the pan to make sure it cooks evenly and mix it often. I’ll reach the consistency of scrambled eggs in around 5-6 minutes. It may seem a bit runny at first, but it’ll thicken up as you cook it. Serve as is or with some spinach, toast or even potatoes.
